It's nice to see that not all "fast food" corporations are evil and not all of their food is complete crap. There's this piece in yesterday's Washington Post (thanks Mom) about Chipotle Mexican Grill and their use of Polyface Farm's pork in their carnitas (mmmm...carnitas). It's interesting to see what hurdles they had to overcome to successfully use the locally, naturally raised pork in a way that was consistent with company (and regulatory standards). The fact that it wasn't necessarily an easy switch lends some weight to the probability that it isn't just a publicity move. Good for them and for Polyface too, I guess, for not refusing to deal with someone on the other side of the fence.
Finally, I am aghast. An overabundance of shoulders and legs? C'mon. I need to talk to the people who are choosing pork chops over pork butts.
